I’m using American Southern as a very wide umbrella here, which I don’t think is necessarily all that fair. If I start breaking it apart, then Cajun/Creole food might knock out Thai in my top 3.

American Southern is too broad. It encompasses Cajun, BBQ, roadkill, etc.
