Here's the recipe I use. It's turned out plenty flavorful before, maybe I added too much water or something.
Barbacoa Beef

Ingredients

3 pound tri tip or chuck roast, some fat trimmed off(leave some for flavor) Cut into about 4 or 5 large pieces
1/2 a yellow onion quartered
2 large garlic cloves cut in quarters
1 jalapeno, chopped- stem and seeds removed if you dont want to spicy
2 tbs of chili powder
1/2 tsp of garlic powder
1/4 tsp onion powder
1/2 tsp pepper
salt to taste, I add about 1 1/2 tsp salt
1 -2 cups of water

How to make it

Place all ingredients in slow cooker, and add enough water. Set on low and let cook for about 7-8 hours until very moist and shreds easily. There should be enough liquid to keep it moist. Or cook on high for about 4-5 hours.

That sounds delicious! I don't typically like beef roasts, but I'm gonna try this one.

I've got one of those hand crank radios that can charge my cell phone. It takes a lot of cranking but I've been masturbating a lot lately so it's no big deal

Crockpot Cowboy Casserole. Basically chili ingredients over roasted potatoes. We're staying in a cabin in the Rockies this weekend and wanted a dish fitting of our surroundings.

Pork shoulder got tossed in with who knows what last night. Carnitas for days now. We made some cabbage slaw with jalapenos, corn and radish and threw it all on some new tortillas I'd never tried.
