I really have to, ive overdone it before, although outside on the grill, i never really do, but using a broiler on a small gas stove means its under the oven so stooping down for extended periods of time to check it is not much of an option for me.

If you have to, use a thermometer. DONT cut into it!!

you have a gas stove..grill it on top in a cast iron pan
