I'm intrigued by your "egg inside a pepper" trick, I've never had that before. I'll have to try it soon.
Super basic cooking technique, but great.

Omelet with onion, jalapeño, spinach and fresh grated cheese with about 3 rashers of bacon

Thanks! It is the most important meal of the day. And I only get to have what I want without worrying about anyone else once a week. If that sometimes. I have to make it count.

Ha, great second point. I love my breakfast cooking time. It's the one hour of the day that I'm guaranteed peace, quiet and podcasts.

Getting rid of kids AND Mrs Wease for the night! Now I get TWO breakfasts! What should I have tomorrow that's low carb?

Try my egg in a bell pepper basket technique. Enjoy alongside some jalapeño bacon and a yogurt parfait.

Coat the bacon in oil then mix up some minced jalapeños into some garlicky dry rub. Go to town.

Here's a bacon idea if you've not tried it. Take the bacon slices and dredge them in flour. Just like you would a pork chop or cube steak. You can season it first if you want. I usually do black pepper and cayenne. After you dredge it, fry it. A deep fryer works best, but we don't have one so I use oil in a skillet. Fry until golden brown.

As soon as I lose more weight and get off this low-carb thing, I'm making this again. It's been too long.
