Started a kalua pork last night, woke up with the house smelling wonderful. Can't wait to have this to pick at all week.

My wife and I made something called "Mississippi Pot Roast" the other day and it turned out so good that we made a second batch to freeze for later.
Along with chuck roast, we threw in onions and au jus, pickled banana peppers and some powdered ranch dressing. I have no idea where she found this recipe or why she is calling it Mississippi pot roast but it works well on a french bread sandwich.

made baby back ribs in the insta pot tonight. after a quick broil on both sides, they were really, really good.

1 yellow onion, chopped
1 carrot, grated
1 cup finely chopped dill pickles
3 large red potatoes (skins on), cut in 1/2 inch dice
32 ounce carton chicken broth
1/2 cup pickle juice
1 Tbsp Worcestershire sauce
3 cloves garlic, minced
1/2 cup fresh dill, chopped
3 cooked brats, grilled and sliced (you may want to cut each slice in half, for smaller pieces)
3/4 cup sour cream
3 tablespoons flour
Salt & pepper, to taste
garnish
fresh dill
thinly sliced pickles
Put everything in the crock pot up to, but not including the sour cream and flour. Let it cook on low for 4 hours. Mix sour cream and flour together, stir in mixture, and cook for another hour until smooth and slightly thickened.
I used 4 brats not 3, and boiled them in beer and water. The consistency of a boiled brat worked well with the soup. Also, I used medium sized potatoes, not large, and it is plenty of potatoes for the amount of soup this makes.

threw some chicken breasts, a splash of olive oil, and a hearty pour of this in the crock pot and it was delish
