I always count waltzes in my head as one-TWO-THREE-one-TWO-THREE, like Leonard Cohen's "Take This Waltz." (which I see is exactly what you said in your follow-up post)
This might be why I am a terrible dancer.

When I do this exercise in my mind, I count one-TWO-THREE-one-TWO-THREE on songs like "Deep" and "Red Mosquito" and "Half Full" in the same way, though the songs have a much different aesthetic obviously. Maybe it's a matter of the signatures being the same but the emphases being different? As you can see I am not a drummer

yes, exactly; 6/8 is a signature, waltz is a "feel"
I think there are Pearl Jam songs that have waltz in the melodic instrumental but not in the drums, which I'm primarily hearing when I listen to anything; so if I recall, a song like "Low Light" starts to *really* "waltz" when the keys start hitting those *-2-3, *-2-3, *-2-3 stabs during the outro, but the drums continue on that typical 6/8; that might be why you (or anyone more likely to sonically hone in on guitar or keys than me) hears a stronger waltz in it than I do
I've come to think time signatures are a bit of a scam really lol, it's all about having a shared language to communicate the "feel" to the other players; if you're doing that you're golden

Yes, that is absolutely true; as a guitar player, if I was playing something like "Low Light," it would roughly feel like:
root note / CHORD / CHORD
root note / CHORD / CHORD
...with the emphasis on the 2's and 3's.
That's always the exercise I do in my mind, i.e. does this pattern fit the time signature, which is probably an oversimplification.

Yep, it’s one of my favorite parts of any song they’ve made. I’m trying to think of other songs that feature Stone finger picking. Off the top of my head “Release” “Parachutes” and that killer intro to “Let the Records Play” come to mind. What else?
