Why is Winterfell still on fire in the opening? Wouldn't that be put out by now? Please, no spoilers.

I dont think we are meant to take it literally, it is more to show it is destroyed. It is not completly in ruins but it was damaged. Don't read too much into it. I think they think it just looks cooler that way.

It is cool how they changed the opening, I just thought by now they'd change it to perhaps a bunch of buildings in ruins....but, if the damage was big enough I guess it's logical to conclude that it might still be smoking....

I think they do it for orientating the viewer to where Bran is/was as well as using it as a metaphor for the Starks. If you have a good sound system you can hear the sizzling of the smoke in the ruins and the little leaves bursting from the godswood tree (something I hadn't noticed until I replaced my 15 year old speakers).

Also, I may have missed it but wasn't there some sort of kerfuffle about a meteor in the sky at some point in season 1 or 2? Did that resolve itself without me paying attention?

Dragons
every group had their own theory about it, but the likeliest explanation was the return of dragons to the world.

Agreed. That has been one of the disappointments with the show. The direwolves are such an awesome part of the books.
