What are those shelled creatures that are split in half with orange dots? Crab of come sort?

Moreton Bay bugs, similar to lobsters.

The orange dots are some sort of roe sitting in a bit of mayo.

Olive oil and lightly salted on outside. Holes, but no foil. I like the skin a little crispy
