It's just weird that when something calls for salt you specifically say kosher salt. It would be like me saying how I season something "with pepper and iodized salt"Chris_H_2 wrote:What kind of question is that you anti-Semite?E.H. Ruddock wrote:does the salt have to be kosher

Not really. There are different ratios and consistencies involved. If something calls for just salt, the assumption is that it’s simple table (or iodized) salt. The only time I ever use table salt is for wet brining. Otherwise I use kosher salt. It dissolves more uniformly and does a better job of keeping moisture in meat with a dry brine.E.H. I love this time of year when McDonald's starts advertising the fish sandwiches.Chris_H_2 wrote:lent starts on wednesday, which means that if i so much as think about eating meat on a friday, eternal damnation awaits my fate. and so i've been stocking up on jars of this. they're pricey (about $8 a jar), but man are they worth it.
funny, because that's really the only time i ever have mcDonalds now. the filet o fish with extra tartar really is satisfying.E.H. see, not a big fan -- the ratio of tartar to filet is thrown way off balance.E.H.
