i'm confused as to how numbers doesnt like paella..it's an easy dish to make amazing, and a hard one to screw up. But he seems to have gotten a dud at some point..

I’ve had one tasty one at a tapas bar in Oxford of all places, but otherwise, yeah they suck. Better in theory, like crab cakes.

I think there’s a wide gap in paella between Spain and the rest of the world. Here it’s mostly mediocre paella, and only once in a while do I get a great one.

saffron is super delicate right? you'd need someone/ a chef knows what they're doing with it i guess.
