Oh boy. You're in for it. An enormous amount of styles and timbres to sift through. Not to mention a massive amount of releases (I think they are on #116 at the moment).
"Zoot Allures" is the only album where Zappa himself plays almost all of the instruments except drums. It's very DIY, and not really one of my favorites. But it's interesting.
"Sleep Dirt" is a collection of outtakes from 1974-1976 and definitely one of my favorites. Make sure you have the original all-instrumental version that is currently available since 2012. The old CD version has annoying overdubbed vocals.

Anybody interested in Zappa should check out the bootleg ("Monsters") that I did with Brad.
It makes jam bands like Phish and Grateful Dead look like the weak, boring shit that it is. Pussy jams.

Discoverying Snarky Puppy's Family Dinner albums ~5 years ago has led me to discover so much great music. One of my absolute favorites is Knower. Through Knower I discovered Louis Cole's solo work, and the whole LA jazz scene he is part of. Guys like Ben Wendel and Nate Wood have been on a heavy rotation on my playlist lately. I love how guys like Louis Cole, Nate Wood and Jakob Mann use their jazz background to stretch the boundaries of jazz and pop music.
This was the Louis Cole video that led me to discover Nate Wood, Jakob Mann, Sam Wilkes and Ben Wendel:
I am generally not a big fan of big band music but I think Jakob Mann has been able to bring something new to that sound:
Nate Wood is just generally awesome. His earlier solo stuff reminds me a bit of Jim O'Rourke. This song could be the love child of early Foo Fighters, Jim O'Rourke and Graham Nash:
And I love how he has completely changed his sound with his latest album:
Ben Wendel and Kneebody that he plays in with Nate Wood are more "traditional" jazz:
