So one of the behind the scenes clips mentioned a stunt double for chewie, which makes sense because im pretty certian Mayhew walks with a cane anyway. So, I wonder, why even have Mayhew anymore? Im not quite familiar with how much of chewie is really is.

He and baker(R2) are both in this apparently. Other report says Baker isn't in it but is credited just to honour him. Mayhew definitely is though.
The 'understudies' were only used for action/stunt shots.
Chewie particularly has a very distinct personality so they wanted Mayhew on board.
And in fairness it would be super difficult for an actor to mimick his movements and reactions if you think about it.
