It was okay. I was improvising mostly so maybe there's a way to improve it but I would always choose basil over parsley given the option.

My recipe is slightly different, I add the eggplant and bell peppers but it's all good. I highly recommend trying it.

i would love this. the problem is, my wife is a vegetarian. and it's too much for me to eat alone.

this, like the majority of hearty bean soup recipes i see, calls for meat (i see bacon or pancetta used mostly). and you can't just eliminate the meat from the recipes without replacing it, because it changes the entire balance (and taste) of the soup.
