Is it normal to start making gumbo or jambalaya this late in the day? I’m not insinuating anything, I just assumed those are both “get up at 5am” sorts of dishes. Like Tonkotsu.
Yeah neither really needs all day. I'm not saying that using the entire day is a bad call. I'm sure there are some purists out there that would say we're not making the real dishes in 2 hours or whatever. But it's just a bunch of delicious stuff in a pot.
Either way, we ended up doing a shrimp an and andouille pasta instead.
Moreso I'm just surprised that you had all the stuff for gumbo on hand, or were looking to begin gathering ingredients at 3:15 in the afternoon. Usually I know what I'm doing for dinner by noon or I'll end up doing something pretty simple with pantry/freezer staples.
It's not hard to go to the store after 3pm.
Yeah but it's not fun either.
I don't find it to be any better or worse than any other time.

Where I'm at, I have two options--I can walk to grab groceries (~40 minutes round trip) or I can take the car. The former means limiting myself to what I can carry; the latter means having to deal with parking. Each option is easier in the morning, either because it means avoiding the heat of the day or getting back at a time when parking is still reasonable. If I do a late-afternoon grocery run it's either because I've already started cooking and ran out of something, or I've already planned to make a very easy meal that night.

This was a disaster. Damn grill fire.

mistake no. 1: i used a gas grill (i was short on time). mistake no. 2: i let my guard down for one second, even though i was aware of the constant flareups because of the fat in the ribs, and the next thing i know the grill is spewing black smoke (i opened the grill and the grate is all flames).
i did manage to salvage most of the ribs (luckily they were bone side down). but they were still sooty.
