I almost got the salmon tonight instead, but I was really in the mood for a whitefish.

bought some thick boneless pork chops for tonight and pounded them senseless to a nicer, thinner version...served with early season sweet corn on the cob and cut up cucumbers with heirloom tomatoes covered in lemon juice, salt, pepper and a splash of olive oil
