i bought small 4 lb brisket flat today....i am going to make my very first home made pastrami next week..brined for 5 days in pickling spice, etc..cant wait to try this..anyone here do it before?

low key don't know if you mean me or not. I'm going to do a chicken thing tomorrow with it.
