I've got shiitakes to get rid of..we're trying to clean out the fridge and freezer before next week
i love omelets. but i never make them.
do you just flip them with a spatula, or do you have some fancy contraption that does the work for you?
spatula..i make great omelets...no need for the "perfect" one...one side flipped over and you're done..
Omelet game changer for me was adding a tbsp of water for every two eggs. Adds just enough moisture so the egg doesn’t burn/dry out before the flip/fold.

I’d used milk previously, but always ended up with burned egg.
