That's because he wasn't part of their household. He was someone Ned found in King's Landing and hired to train Arya.

For a show so willing to show graphic death, I do find it suspicious that his death is supposed to be assumed.

He wasn't just any stranger though, he was a former first sword of Braavos so I'm pretty sure he came with a reputation.

I guess I'm struggling with the concept of him having a reputation as the first sword of Braavos, but he's just some eastern dancing instructor... It seems like a lazy plot construct for a writer who is anything but lazy.

Water Dancing is the style of sword fighting that Syrio employs. I think it was just a way to be hush hush about it with Sansa as she's really the only one who mentions it being "dancing" when Arya has bruises all over from it.
