Hmmm. Maybe I’ll try heating a second pan and setting it on top of the hash as a weight that will cook a bit

Just spread them out in a cast iron. They flatten real nice and brown beautifully.

c'mon, it's not that bad. the hardest part is peeling and grating the potatoes. but that's more time than effort. once you get the water out of the potatoes (i put them in a towel and squeeze the water out), it's not hard at all, especially if you have access to a griddle.
