Oatmeal Recipe

An RMer once PM'd me an oatmeal recipe that changed my life for the better. I never wrote it down anywhere and had to dig deep into my PMs to find it before making it again last night, so I am posting it here for posterity and for quick reference in the future. I hope some of you get the same joy from cooking oatmeal this way that I do.

1) 3 cups water, 1 cup uncooked steel cut oats, 1/2 tbsp butter
2) heat butter in skillet until it just melts. pour cup of oats into skillet, coat them in the butter, and lightly toast them (usually 4-5 minutes or until you can smell them). stir periodically to make sure an even toast is achieved. this pan is a cinch to clean up once it cools a bit
3) once toasted, slowly transfer them to a pot where the 3 cups of water has begun to boil. let the oats cook with a full boil for 60-90 seconds
4) place a lid/cover on them on the pot with water and oats, remove from heat, and let stand overnight
5) eat the oats, refrigerate leftovers...no burned oats
I enhance my version of this using coconut oil instead of butter.

Reid, use the same concept but in an instapot set to 1 minute and let the steam naturally release for 15 minutes. It’ll save you time and cook more evenly.

Oatmeal is dope, and I eat it everyday. I’m definitely going to try Trag’s sweet recipe - the use of turmeric has me intrigued. I typically just use raisins and flax, boring yes, but I’m trying to get three kids off to school, so boring works. I’ll try the recipe this weekend though. Thanks for posting!
