How realistic are the multi-military roles of individuals?

I'm going to use Luke as an example, and only the 4-6 episodes.
In the real world, Luke is a foot soldier. Then, he is a gunner on a medium sized plane or helicopter. Then, he is a single seat fighter pilot.
He is then a 2 seat fighter pilot.
Then, he is a combat hovercraft pilot.
Does this sort of thing really happen in real life?

Luke is not really a good example, as the resistance is small, and he is extra talented as a pilot and with the force. Doubt the same happens with the soldiers of the empire.

I wanna know how realistic it is for the Emperor to build, man and pay for all of those super duper Star Destroyers without anyone knowing. They way overdid it with the scale of that fleet. 12 would have been enough nevermind 1200.

I asked my Vet buddy about this and he told me to find you and punch you in the face for trivializing this military experience by comparing it to Star Wars.

The universe probably has a lot stranger alien life forms than we see in Star Wars. It's a bit weird that 90% all look like humans in Star Wars, not that a few look like strange aliens.
