I've only ever done it at one place, a neighborhood restaurant, I was friends with the owner

But "spicyness" does not equal "palatable," because "spicy" is not a thing that is universally regarded as "good." Not everyone likes spicy food -- in fact, most people don't! -- which is not the same as, I dunno, whether something is chewy and insipid

There are limits to what you can do, like bringing some extra chicken or something. But a little hot sauce from a small bottle, that shouldn’t bother anyone.

It's slightly weird and I can't say I've done it or been with anyone who has.
Now, that being said, when you're kind of pigeon-holed in frequenting these diner/chain-ish type places where the only option for a hot sauce is Tabasco, then, yeah, I probably would do this.
