if I bite down on a stick of rock but I can't do it, it's just too hard for my teeth, even though I'm sure it tastes delicious, so I walk away, am I post-rock?

yes. i'd add that if you went after the rock in the first place, you're most definitely post-rock.
on the other hand, if you went after Dwayne "The Rock" Johnson, you'd likely just be in for it.
