Your Star Wars Character?

If you could choose/create your own character to play in a galaxy far, far away, who/what would you pick?
Not sure if I'd want to be a Jedi but I think maybe like a Force sensitive bar tender. That could be cool.

Whatever the name of Timothy Olyphant's character is...I figure being some version of Timothy Olyphant would be pretty great.
