i feel like Plating this the one exercise where the rules about food hygiene suddenly vanish
chefs are not supposed to manhandle the food about to go in the customers' mouths, i think
but when it comes to Plating
then it's game on to just start artistically sprinkling everything onto the plate, and using your pinky finger to make sure the thing you are placing with the spoon lands just right, and fuck it maybe we just grab a couple of chunks of black sea bass and line them up with a spritzy hand affect as if we are Salvador Dalí blessing their plate with artistry
thus, they can touch the food with their hands, that will soon go into my mouth
