I thought I had tried poutine, but it turns out I tried something else entirely (a "Caesar salad")

If you're not using a high quality Quebec cheese curd, then don't bother.

It is very important to me, but we can't get good poutine here in the southern U.S. So it is a rare treat.

You can get poutine at McDonald's here, but I've never tried it. Most of the poutine I've eaten in my life has probably come from the burger chain Harvey's.
Every once in a while I'll make it at home if I have some leftover gravy. But again, it all comes down to the quality of that curd. As well as the crispness of the fries, or else you'll just have a soggy mess on your hands (which is still pretty good)

agree poutine requires quebec cheese curd
would add that it should be consumed after at least 3 beers but preferably 5 for maximum effect

In my hometown we have a street food called chuzo desgranado. It's actually nothing like poutine in terms of flavor, ingredients or looks, but it serves a similar function and cultural standing I think. Indulgent 2 AM drunk food.
