Apple device - display to video projector via HDMI

Hi team, a little help please?
I am trying to display the homescreen of both my iPhone (4) and iPad (first generation) through a converter to HDMI cable, and project it up on the wall.
My problem is that it won't display my home screen or anything else I am working on (in this case, I want to show my team at work how to use a new mobile app and display it on the big screen for them). As of right now, the only thing I can get to actually project is when I play a video on my Apple device. The video shows up just fine projected on the wall, but when I go back to my home screen or a web browser or anything other than video, the screen display on the wall goes black.
Anyone know of a setting that I can use so that my Apple device is always sending an image out that can be displayed on a screen via HDMI?
